Ingredients

Wet Brine

  • 2 cups of vegetable stock
  • 2 cups of ice water

  • 2 tablespoons of kosher salt
  • ½ teaspoon of black pepper
  • 1 sprig of fresh rosemary or 1 teaspoon of dried rosemary
  • 2 sprigs of fresh thyme or 1 teaspoon of dried thyme

  • 3 Ibs of turkey wings (four wings, approximately ¾ Ib each)
  • ½ teaspoon of black pepper
  • 1 teaspoon of onion powder
  • 1 teaspoon of garlic powder

Wet Brine
